TASTING NOTES
Deep garnet red in colour, this classic cool-climate Cabernet Sauvignon opens with lifted aromas of violets, cassis and blackberry, layered with subtle notes of dark chocolate, cedar and earthy mulberry leaf. The palate is elegant and finely structured, showing concentrated blackcurrant fruit framed by silky tannins and beautifully integrated French oak. A wine of poise and persistence, it captures the depth, balance and age-worthy character that define Mount Barker Cabernet.
VINEYARD
Fruit is sourced from our dry grown vineyard in Mount Barker, where mature vines thrive without irrigation on ancient gravelly loam soils. Naturally low yields and small berries produce intensely flavoured fruit with concentrated colour and fine tannins. The cool Great Southern climate promotes slow, even ripening, allowing exceptional flavour development while retaining natural acidity and structure.
VINTAGE COMMENTS
A late, wet spring was followed by a relatively dry and warm summer. Healthy vine canopies protected the fruit from the harsher conditions, while cool nights encouraged slow ripening and flavour retention. An early start to vintage delivered fruit-driven whites with vibrant acidity and reds of excellent balance and varietal expression.
WINEMAKING
Mechanically harvested and fermented to maximise varietal character, the wine remained on skins for extended maceration to build depth of colour, flavour and structure. Careful handling throughout vinification and maturation ensured harmony between fruit and tannin, with the wine spending a minimum of two years in quality French oak before bottling to create a classic, elegant and age-worthy Cabernet Sauvignon.
