Hand-picked from our dry-grown Mount Barker vineyard, this Cabernet Sauvignon is crafted using 100% whole-bunch fermentation to enhance perfume, freshness and complexity. The fruit is fermented with stems intact and left on skins to maximise colour, flavour and tannin extraction before being matured for two years in quality French oak. Our minimalist approach allows the vineyard and vintage to shine, producing a distinctive cool-climate Cabernet with vibrant fruit, refined structure and a true sense of place.
